We are a vibrant young company, passionately producing a range of hand-made chilli sauces, salsas, cooking pastes and spice blends, designed to promote our ethos of 'Fragrance over Fire'; i.e. to bring out the fragrance and aroma of the chilli whilst controlling the amount of 'fire' from the active ingredient in chilli, which is a compound called capsaicin. We achieve this by hand-preparing our fresh chillies, which possess a vibrancy and energy, not to mention flavour, that is absent in dried chillies and powder. Our chef blends our recipes using fresh, local ingredients at their best and most energetic and - uniquely, using our own chillies grown in Hampshire, Sussex and Dorset. After travelling and living in many different places around the world, experiencing their cultures and lifestyles, we have settled back in the verdant countryside of Hampshire, where we began selling our products in the summer of 2003. Drawing on our culinary experiences from all our travels, and our lifelong interest in cookery, we have designed a set of recipes with expertise, style and imagination. Too often we found that the 'glorious fruit' was maltreated. Many concoctions being nothing more than just a watered down version of the traditional storing medium for chillies of vinegar and salt. It is our mission to remedy that situation, bring to the general public the remarkable culinary benefits associated with using the extensive range of cultivated chillies as a food source and not just as a spice- and make it part of the everyday diet!. Using the concept of 'molecular gastronomy' and our knowledge of 'chilli alchemy', we have blended a range of gourmet chilli sauces and salsas that exemplify the qualities of specific chillies, and have a multitude of uses, limited only by your imagination. They are a key to open a culinary wonderland.
